My mom needs to lose weight, HELP

My mother is 63, 5 foot 5, 198lbs, and has Myasthenia Gravis (read about it here http://www.ninds.nih.gov/disorders/m...nia_gravis.htm). She recently sprained her knee and is, possibly, developing gout in the area, so aside from the MG her exercise options are limited.

I decided that we should tackle her eating lifestyle first (way too many fried foods). She has had a stroke in the past related to the medication she was taking for the MG, but currently has no high blood pressure.

Normally, I would put her on the similar diet as my own: high protein low carb.

Example

Breakfast: Oatmeal, 2eggs
Lunch: Tuna, Veggie
4pm: Chicken Thigh, Broccoli
8pm: Salad, Yam

My concern is how heart healthy a high protein low carb diet is and how to vary this up to keep her interested in it whereas I am perfectly content eating the same thing over and over again.

If anyone has any diet plans or spreadsheets they can share that would be invaluable...many thanks.

Help guys and gals. What kind of foods should i be getting, keeping in mind her health issues? Can i put her on a high protein low carb diet?
